As we embarked on our culinary adventure during the restaurant’s soft launch on August 25, 2023, Tong Restaurant’s signature dishes left an indelible mark on our taste buds.
The Yuzu Kombu Capellini with Caviar is a symphony of flavors, where the zesty yuzu dances with the umami of kombu and the luxurious notes of caviar. It’s a dish that pays homage to tradition while embracing modern innovation.
Local Prawns marinated in Grand Marnier and Clarified Butter brought the shores of Malaysia to our table. Each succulent bite transported us to the coastal breezes, and the lingering citrus notes from the Grand Marnier gave a vivacious twist to this classic dish.
Cauliflower with White Chocolate Sauce – a creative coupling of Cauliflower, White Chocolate Sauce, Lumpfish Caviar, and Micro Herbs – brought unexpected elegance. The creamy sweetness of white chocolate played against the earthiness of cauliflower, crowned by the delightful burst of caviar.
Baked Brie Cheese with Salted Egg Tomato Salsa was a fusion masterpiece. The creaminess of Brie, the richness of salted egg, the tanginess of tomato salsa, and the crunch of roasted almonds engaged in a delightful dance of flavors and textures.
Moving on to the main course, the Foie Gras Claypot Rice with Serrano Ham. It was more than just a dish; it was an experience. Flames caressed the claypot, as alcohol flowed in a mesmerizing spectacle. The symphony of Foie Gras, Serrano Ham, Jasmine Rice with Aromatic Oil, Balsamic Reduction, and Whiskey was a crescendo of indulgence and opulence.
Pork Ribs with Prune Tomato Salsa epitomized the art of slow-cooking. After 6 hours of patient braising, the tender pork ribs were elevated by the tang of prune tomato salsa and the earthy depth of fermented beans.
Dessert was a poetic finale to our culinary journey. Deconstructed Apple Tart with Apple Sorbet presented apple compote, green apple sorbet, and ginger cinnamon syrup in a delicate dance of flavors.
Not That Chendol delighted with Callebaut Chocolate Ice Cream, Braised Red Bean, and Coconut Cream. And Pandan Granita with Desiccated Coconut and a delightful surprise brought a refreshing, tropical touch to our sweet ending.
